A passion for quality wines has encouraged the Cambria family to invent vulca-oenology, a vine-growing and wine-making ‘laboratory’ par excellence, producing high quality grapes with a particular organoleptic and aromatic complexity. This open-air ‘laboratory’ has produced excellent vintages: seven reds and a white make up the production kaleidoscope of a company whose experimentation is its hallmark. The wines are refined for long periods of time in barriques (225 litre-oak casks), remaining in contact with the dregs throughout the first phase of aging to draw out their organoleptic characteristics. Modern bottling machinery guarantees hygiene and safety, after which the wines continue to mature for some months in the wine-cellars; they are only put on the market when refined to the point of perfection.
