Our Etna Bianco DOC is straw-coloured.
On the nose has citrus notes of lemon and cedar mixed with orange blossom and jasmine. On the palate it is full bodied but well supported by the acidity that gives the tasting a rare persistent freshness.
Cold maceration for about 24 hrs, followed by cold setting. Fermentation in stainless steel at controlled temperature – 16°C – for about 20-25 days.
Maturation in stainless steel on yeast for about 6 months, followed
by aging in bottle.
